I Wouldn't trust random untrusted people off HF for multiple reasons, your UDID is a key part of your device and you are giving it to random people to place on their developer accounts, they could also take you off their accounts at any time and you would be left with a brick, whereas this service is offered by trusted people where we can assure you your device will remain on the developer account. You can install them without UDID
Just shift restore to 5.1.1 , don't run the setup on the device , then shift restore to the beta :)
